Each pecan is individually roasted then cooled three times. Cane sugar, pure vanilla, and fresh cinnamon are combined at the right moment in the right temperature in small copper kettles. Only two and one half pounds can be roasted at a time. It is not the most efficient way to roast a pecan but it is the best way!
