Four Seasons Hotel & Residences New Orleans announces the November 13 grand opening of Trattoria Varco, a new Italian restaurant overlooking the Mississippi River. Celebrating the artistry and traditions of Italian cooking, Varco brings together handmade pastas, fresh cheeses, house-cured salumi and the generous spirit of Italian hospitality in a lively, welcoming setting on the New Orleans riverfront.

Inspired by the warmth and conviviality of an Italian neighborhood trattoria, Varco is grounded in a shared appreciation for quality ingredients, time-honoured techniques and the simple pleasures of gathering around the table. Meaning “passage” in Italian, Varco draws inspiration from its setting overlooking the Mississippi river, a historic gateway for cultural exchange, and the shared love for food, hospitality, and gathering that connects Italy and New Orleans. From pasta shaped by hand to freshly baked focaccia and hand-pulled burrata, craftsmanship is woven throughout the experience, inviting guests to savor the Italian philosophy of la dolce vita through the unmistakable hospitality of New Orleans.

A Celebration of Italian Craftmanship

Under the direction of Chef Glen Forman, Trattoria Varco celebrates the richness of Italian culinary traditions through a menu rooted in craftsmanship, seasonality and abundance. An emphasis on preparation from scratch brings the kitchen’s artistry to the forefront, with handmade pastas, fresh cheeses, hand-pulled burrata, house-cured salumi and breads and focaccia baked in-house.

Designed to be savoured and shared, the menu begins with abundant antipasti, crudo, artisanal cheeses and cured meats. Handmade pastas take centre stage, from lamb and ricotta agnolotti del plin to paccheri Bolognese and spaghetti cacio e pepe, alongside Italian-inspired preparations of Gulf seafood, grilled meats and seasonal contorni for the table.

Executive Pastry Chef Emily Rosenberg brings her expertise and creativity to a collection of beloved Italian desserts, from tiramisu affogato to budino and bombolone, offering a sweet finish to a meal meant to linger.

The Italian Art of Aperitivo

Adjacent to the restaurant, Bar Varco brings the timeless ritual of Italian aperitivo to New Orleans. Designed as both a destination of its own and a natural beginning or ending to dinner at Varco, the intimate bar transitions from afternoon aperitivo into evening drinks, with a beverage program spanning Italian classics, spritzes, regional wines, espresso and spirit-free cocktails.

A menu of bar snacks is designed for grazing over drinks, with offerings such as house-cured meats, crispy mozzarella bites, ricotta and prosciutto crostini, Louisiana Gulf oysters and pizzette. Nightly Aperitivo Hour will further bring the convivial spirit of Italian bar culture to life.

A New Gathering Place on the Riverfront

The arrival of Trattoria Varco continues the evolution of the culinary experience at Four Seasons Hotel New Orleans, creating a new destination for locals, visitors and Hotel guests on the fifth floor. Whether stopping in for an afternoon aperitivo, settling in at the Salumi Bar, dining beneath the open sky on the Terrace or gathering around the table in the main dining room, Varco is designed for lingering, connecting and making everyday moments memorable.

Following a soft opening on October 28, Trattoria Varco celebrates its official grand opening on November 13, 2026, at Four Seasons Hotel New Orleans. The restaurant will be open for dinner Tuesday through Saturday from 4:30 - 10 pm and daily breakfast from 6:30 am - 12:30 pm.
