Available for one night only, this special culinary event brings together two of the region’s finest Italian chefs – Executive Chef Marco Violano of Alto, and Chef-Owner of one Michelin-starred Art di Daniele Sperindio in Singapore.
A Night of Italian Indulgence
The special four-hands dinner features classic specialties from around Italy, elevated with modern touches and innovative twists. The five-course menu is a masterful composition of authentic flavours and prized ingredients, evoking the irresistible abundance and joy of an Italian dinner table.
Discover creations such as Cappon Magro, a sublime medley of white beetroot, royal oscietra caviar, l’etoile oyster and drunken pear snow, and La Superba, a hearty plate of 32-egg yolk taglierini pasta with sumptuous elements such as vintage duck giradito and winter truffles.
The main course is Stockyard Beef Tenderloin, which promises to delight the palate with just the perfect degree of sear and succulence. Conclude the evening with Sfera Rossini, a delicate dessert crafted with prosecco cream and crystals, strawberry & vanilla rose compote, and pistachio sponge.
Offering a glamorous sky-high setting for fine dining, Alto Restaurant & Bar regularly hosts creative epicurean collaborations. Meet the Chefs
Chef Daniele Sperindio began his culinary journey at the tender age of 13 in his hometown of Genoa, subsequently crossing continents to train under Michelin greats such as Grant Achatz at Alinea in Chicago and Yoshihiro Narisawa in Tokyo. Nominated several times for the World Gourmet Summit Awards of Excellence, Chef Daniele directed the culinary program of the award-winning ATLAS Bar in Singapore. In 2020, he joined The ilLido Group in Singapore where he helmed multiple teams and has achieved Michelin star status for two of the group’s dining concepts. Chef Daniele is now Chef-Owner of Art di Daniele Sperindio (1 Michelin star) in Singapore.
Hailing from Puglia in Italy, Chef Marco Violano believes in feeding people well, so they can feel the love behind every bite – “that is the true Italian spirit.” With a deep respect for the origins of food, his culinary approach allows the inherent flavours of each ingredient to shine through. Chef Marco has mastered the art of Italian cooking in celebrated kitchens around the world, from Milan and London to Singapore and Beijing. Since 2019, he has been Executive Chef at Four Seasons Hotel Jakarta where he oversees all culinary experiences, including five dining outlets, room service, catering and banqueting for special events.
