Founder of Sydney-based online dietary cake premix company - my Sweets Paradise, Gabriel Djan, said developing baked cake recipe without the three key ingredients – gluten, egg and dairy - is one of the most challenging for bakers and pastry chefs.

“We experimented for several years before getting these recipes down pat,” said Ms Djan.

“Using ingredients like brown rice flour, potato starch and tapioca starch tastes far better than the traditional gluten free white flour, often used in mass-produced products,” she said.

Ms Djan said the main substitute ingredients used when baking without gluten, egg and dairy are:
 

  • Brown rice flour, tapioca starch and potato starch: Instead of traditional gluten-free white flour, the blend of these three naturally gluten-free flours acts as part of binding agent in baking process. In some cases, the potato starch itself acts as the binding agent.


 
  • Oil, water and almond milk: These ingredients are the good source to substitute dairy or butter in baking process.


 
  • Banana puree: Perfectly substitute egg instead of egg replacer and xanthan or guar gum, yet giving the sweet flavor and fragrance aroma to the cake.
