Saz’s Introduces Their New Saz’s Signature Braised Pork — A Delicious Collaboration Between Four Wisconsin Companies

Saz’s State House Restaurant is a Milwaukee favorite for Barbecued Ribs and Saz’s is a popular festival destination for Pork Sandwiches, in addition to their famous Mozzarella Marinara and Sour Cream and Chive Fries. So when Saz’s introduces a new barbecue item, ears perk up. March 1st marks Saz’s 36th year in business and they are marking the occasion with the introduction of Saz’s Signature Braised Pork sandwich at the State House Restaurant. And starting March 5th, this same delicious signature sandwich will be available at Saz’s Cart in the Bradley Center during all Milwaukee Bucks games.

The new Saz’s Signature Braised Pork is made from a slowly cooked braised boneless pork butt sourced from top of the line genetics, which yields the highest quality flavor and texture.
Antibiotic and hormone free, this tender, tasty pork is then mixed with Saz’s award-winning Original Barbecue Sauce for an exceptionally savory flavor.

The team that made this new barbecue item a reality is comprised of Melotte Distributing and Bonewerks CulinArté (operating out of Green Bay), Contract Comestibles (located in East Troy), and of course, Saz’s (of Milwaukee). These four Wisconsin companies have collaborated to bring Saz’s Signature Braised Pork to market. “These guys are amazing to work with,” said Steve Sazama, founder and owner of Saz’s. “They understood what we wanted – a tender, flavorful barbecued pork that, when mixed with our signature sauce recipe, would create an enhanced flavor beyond expectations,” Sazama continued.

John Delikat and Mathew Nitz of Contract Comestibles worked with the Saz’s team in the late 1990’s to develop a retail version of Saz’s Original Barbecue Sauce that was made from real sugar (not high fructose corn syrup) and that was gluten free. They have also collaborated on additional sauce varieties: Saz’s Sassy BBQ Sauce and Saz’s Vidalia® Onion Cooking Sauce. Contract Comestibles produces and bottles the sauces for Saz’s retail distribution as well as producing the sauce for the restaurant, food service, festivals and catering.

Harry Mellote owner of Melotte Distributing and Chef Tom Sausen from Bonewerks CulinArté worked with Saz and his chefs to find the best cut of meat and cooking process for the new signature pork. “Finding the perfect combination of cut and preparation was an interesting challenge, because Saz had a definite idea of the flavor profile he was looking for,” stated Tom Sausen. “Harry suggested that we try pork butt, which is actually a wonderfully flavorful cut from the shoulder. We then tested a slow braising method, which really pulled the savory flavors out of the meat,” Sausen added.

Kathy Fitzsimmons, sales and marketing director for Saz’s Barbecue, has worked with the company for twenty years and sold over 2,000,000 bottles of barbecue sauce.
