When Mr. Roxburgh called the Roxburghe Hotel in the Scottish Borders and asked if he and his bride to be could have grouse for their Wedding Breakfast on August 13th the reservations staff were understandably intrigued.

The name Roxburgh (without the ’e’) might have been coincidental but grouse for breakfast at the start of the grouse season was doubly intriguing. Needless to say the reservation was taken without faltering and the Roxburghe Hotel made sure the requirements of the Roxburghs were met.

With an enviable location on the Roxburghe Estates, adjacent to the Roxburghe Championship Golf course and close to some wonderful fishing beats on the River Tweed. Owned by the Duke of Roxburghe and with rooms designs by the Duchess, the Roxburghe Hotel is well know for good food and reflects the relaxed charm and elegance typical of such an exquisite Scottish country house.

The Glorious 12th marked the start of the grouse season and, with the guns on the morning proving very successful, the newly wedded Mr & Mrs Roxburgh and their guests enjoying the first grouse of the season as part of their wedding breakfast. The main dish of roasted Lammermuir grouse, braised savoy cabbage , toasted pine nuts, pancetta and dauphinois potatoes provided to be one of the highlights of a very memorable day.

Roxburghe’s executive chef Mark Swinney is quoted as saying he relished the challenge of serving grouse for breakfast. The fresh produce from the Roxburghe Estate and the local Kelso suppliers is a chef’s dream. With seasonal fruits and the possibility of fresh caught salmon or trout from the River Tweed, he believes the Roxburghe Hotel can create a wedding breakfast fit for a king... or a duke.
