Mimo Restaurant and Bar at Four Seasons Hotel Nashville to Host Bar-B-Que and Bourbon Dinner with Former Top Chef Contender Manny Barella
Led by the culinary team at Four Seasons Hotel Nashville, and with special guest Chef Manny Barella, the four-course dinner on September 18, 2025 includes handcrafted Belle Meade Bourbon cocktail pairings
Mimo Restaurant and Bar, the Tuscan-inspired restaurant at Four Seasons Hotel Nashville, invites guests to a special, one-night-only prix fixe dinner featuring bold smoke, rich bourbon, and unique flavours at the Bar-B-Que and Bourbon dinner.
This special evening brings together Executive Chef Derek Simcik of Four Seasons Hotel Nashville and Chef Manny Barella, a top five finalist on season 21 of Top Chef, for an exclusive collaboration. Barella, who was named a James Beard Emerging Chef finalist in 2022, is now the Culinary Director at Camp Pickle and Jaguar Bolera. The Bar-B-Que and Bourbon Dinner will include a cocktail reception and a four-course dinner, with each course perfectly paired with a handcrafted Belle Meade Bourbon cocktail created by Beverage Manager Alex Renoue.
The evening will begin at 6:30 pm with a welcome cocktail and passed appetizers. At 7:00 pm, guests will be seated for the first course of Smoked Bone Marrow with guanciale marmalade and pickled shallots, a silken celeriac–brown butter purée, and warm toasted brioche created by Chef Nicky Miscia of Mimo Restaurant and Bar. The decadent course will be paired with the Boulevardier made with Belle Meade Reserve woven with Campari, Cappelletti Italiano Bitter, house vermouth, and dark chocolate bitters.
Chef Manny Barella will follow with a coffee-rubbed, Slow-Smoked Pork Belly draped in mole manchamanteles with apple, pineapple, and guava, finished with a crisp apple–fennel slaw. The cocktail pairing for the course will be the Bourbon and Tepache and Coffee and… featuring Belle Meade Classic, tepache and guava cordial, Mr. Black Cold Brew, and mole bitters.
Chef Derek Simcik will present the main course of Lamb Shank with smoked eggplant purée and a deep burnt beet BBQ sauce. The Belle Meade Sour with Reserve Bourbon, Beaujolais, burnt-sugar syrup, Amaro Cardamaro, and lemon offers a tart, fruit-driven contrast.
Lastly, Mimo Pastry Chef Hector Llompart will present a rich Chocolate Fondant, paired with the Maple-Smoked Old Fashioned, a fireside blend of Belle Meade Classic, salted maple, and black walnut and wild orange bitters.
Tickets for Bar-B-Que and Bourbon are USD 100 per person, including a welcome cocktail, four-course dinner, and bourbon pairings for each course. Reservations can be made through OpenTable or by calling the restaurant at +1 615 610 6990.
