Riva del Fiume Introduces Pizza Omakase: 365° at Four Seasons Hotel Bangkok
An eight-course pizza experience celebrating Italy’s finest ingredients — fired at 365°C and designed for sharing
In Italy, pizza isn’t just a meal—it’s a way of bringing people together. Inspired by that spirit of sharing, Executive Chef Andrea Accordi has reimagined the country’s most beloved dish with a creative, playful twist. At Riva del Fiume Ristorante, Pizza Omakase: 365° transforms pizza into an eight-course experience, where each course surprises with seasonal ingredients and Chef Andrea’s signature craftsmanship. From light and delicate to bold and indulgent, every creation is fired at exactly 365°C and designed to be enjoyed together.
“Pizza is Italy’s most sociable dish—it brings people together,” says Chef Andrea. “At Riva del Fiume, we wanted to celebrate that tradition in a new way—something fresh, fun, and a little unexpected.”
Available Friday to Sunday at 7:00 pm, Pizza Omakase: 365° is served omakase-style for just one communal table of eight—an evening of conversation, creativity, and seriously good pizza.
“Pizza is something everyone loves, but we wanted to show it can be much more than people expect,” Chef Andrea adds. “Some courses are light and delicate, others bold and indulgent—each one tells its own story, but every bite stays true to the spirit of Italian cooking.”
The journey begins with golden fritti topped with akami tuna and Sicilian red prawn, followed by the comforting simplicity of a classic Regina Margherita. From there, the creativity unfolds: grilled octopus with Pantelleria capers, a black truffle and culatello al taglio, and a delicate cornetto filled with stracciatella and pistachio-mint pesto. Smoked scamorza meets pancetta and Bronte pistachio, while another course contrasts crispy fried dough with burrata, Joselito ham, and basil emulsion. For something bold and briny, there’s sea urchin and bottarga, finished with mustard leaves and tomato fondue. The experience ends on a sweet, herbaceous note—strawberry coulis, fig leaf ice cream, and mascarpone cream scented with verbena.
Each course highlights seasonal Italian ingredients and unexpected pairings, crafted to inspire sharing, conversation, and discovery. “Each dish has its own character—some nostalgic, some surprising—but all are meant to be shared, passed around, and talked about,” says Chef Andrea. “It’s casual, it’s social, yet every detail is carefully crafted.”
Pizza Omakase: 365° is priced at THB 2,500++ per person, including a welcome aperitif, house water and coffee. Wine pairings are available by the glass or bottle for an additional cost. Guests are also welcome to bring their own bottle—no corkage fee applies.
Reservations are now open for the first experience launching August 8, 2025 at Riva del Fiume Ristorante, Four Seasons Hotel Bangkok at Chao Phraya River.
