As the sun dips below Lisbon’s skyline, the city’s most stylish summer soirée comes to life. Four Seasons Hotel Ritz Lisbon introduces Iki Pop-Up Summer Nights at the Ritz Pool Bar — a luminous, after-dark escape where Japanese flavours meet poolside ambiance, and cocktails shimmer under the stars.
Rooted in Japanese culture, Iki embodies a refined, effortless elegance — chic yet understated, with origins in the Edo period. It reflects cultivated simplicity, grace, and personal charm — a fitting inspiration for this unique seasonal concept.
Set against the glow of a retro-inspired bar and the shimmering reflections of the pool, this summer pop-up transforms the Ritz Pool Bar into a chic nighttime oasis every Tuesday to Saturday from July 8th, 2025 to September 15th, 2025. From twilight until midnight, guests are invited to enjoy exquisite Japanese cuisine, beautifully presented sushi, and bold, summer-infused cocktails — all set to the ambiance of the resort-style Ritz Pool.
Making his debut at this culinary experience is Sushi Chef Bruno Prazeres, who brings a daring new vision of high-end Japanese gastronomy to Lisbon.
“We wanted to unlock the full potential of the Pool Bar at night. The summer atmosphere is simply magical, with a resort-style energy right in the heart of the city,” says Guilherme Costa, General Manager of Four Seasons Hotel Ritz Lisbon. “It was the perfect time to welcome Chef Bruno and create a gastronomic moment that resonates throughout Lisbon.”
Guests can explore an à la carte menu of elevated Japanese dishes, each a creative fusion of precision, innovation, and surprise. Menu highlights include: the Otoro tartar, caviar and nori; The fresh Kaki and Ikura: oysters and salmon roe with Ponzu jelly; Indulge with a mouthwatering Kinoko Ochazuke with truffle: mushroom and truffle rice with egg at low temperature. Make sure to also try the Katsu Sando, a delectable Japanese sandwich made with Iberian slow-braised pork. On the menu there’s also a selection of sushi: including Otoro aburi, Chu toro, Akami zuke, Shiromi (white fishes); Hikarimono (silver fishes), Ika (squid); To complete the sensory journey, a curated menu of signature cocktails brings unexpected flavour pairings and vibrant textures — a toast to Lisbon’s warm nights and creative spirit.
On Fridays the ambiance will be elevated with live DJ tunes, that will make these nights even more special.

About Chef Bruno Prazeres
Chef Bruno Prazeres joins the team at Four Seasons Hotel Ritz Lisbon, where he is responsible for the menu at the summer pop-up Iki.
Originally from Alentejo, Chef Bruno Prazeres brings his solid experience in Japanese cuisine to the hotel. In 2019 he joined the team at the Michelin-starred Japanese restaurant Midori and it was there that he honed his technique, mastery and precision inherent in haute cuisine combined with Japanese gastronomy. Later, in 2021, he joined Chef Tiago Penão as Sous-Chef at the Kappo restaurant, where he refined his relationship with Japanese cuisine and his appreciation for produce and seasonality. An example of this is his passion for mushrooms
On the personal side, it is with his family, in nature, in sport and in chess that Chef Bruno Prazeres finds his balance.
