Enjoy Christmas and the City Skyline at Dani Brasserie at Four Seasons Hotel Madrid

This year, the most magical moment at Christmas will be admiring the skyline of Madrid from the seventh floor of Four Seasons Hotel Madrid, where Dani García has prepared a range of special menus in his brasserie to mark the key dates of the festive season. “Our gastronomic proposal on this occasion is a tribute to classic Christmas dishes with a special touch provided by the cuisine of our chefs, Dani García and Ismael Paul, as always in a welcoming and elegant atmosphere,” says Pierre Bauduin, General Manager of Dani Brasserie

The celebrations will kick off on the evening of December 24, 2022 with a tasting menu consisting of Foie Yoghurt with Oporto and Grana Padano; Steak Tartar Tartlet with Béarnaise sauce; and Oscietra Caviar with Roteño broth and crab. The feast will continue with Grilled Scallops with orange beurre blanc and salmon roe; Poached Snapper from Conil with mushroom puntalette and olive oil soup; and Glazed Duck Royale de Challans with lavender honey and baby onions. And the most exquisite, sweet ending will come with Grapefruit Ice Cream with meringue, hibiscus rose sorbet and Champagne granita; and a Vanilla Log, made with chocolate Ceiba 74 percent and buckwheat praline.

The Christmas menu will start with Foie “Filipino” with Ivoire chocolate and cardamom; and Fried Tuna Belly Brioche with white soy. It will be followed by Red Cabbage “Gazpacho” with mustard cream and smoked eel; and Tomato Tatin with feta cheese. The main courses will be Poached “Pyrenees” Trout with vanilla mayonnaise and artichoke cream; and Marinated Venison Loin grilled with black truffle and roasted pumpkin. To finish, guests may also try the Grapefruit Ice Cream with meringue, hibiscus rose sorbet and champagne granita. The finishing touch will be several Christmas Mini Spheres with mandarin, vanilla, gingerbread, and chocolate Ceiba 74 percent.

The evening of December 31, 2022 will feature a special menu starting with a Shrimp Crystal Tortilla with sorrel, Foie “Torchón” with Timur pepper sablé, and Crab Tartlet with hazelnut cream. This proposal will continue with the emblematic Tomate Nitro with green gazpacho with shrimp from Motril; and Elvers Carbonara with herbs and black truffle. The highlight will be the Roasted Turbot with red prawn stew, mushrooms, and green bean cream; and Wagyu Kagoshima A5 with black truffle, grilled lettuce, and sesame. As a final sweet touch, Pear Sorbet with pine honey and poached pear; and Meringue Snowflake with mandarin, citrus caviar, and jasmine.

Dani Brasserie will also be serving a children’s menu for Christmas dinner and plant-based dishes for the three special menus. “For Dani Brasserie, Christmas means celebrating, sharing, and experiencing magical moments in the company of friends and family. And to send off 2022 in style, those who decide to enjoy New Year’s Eve at Dani Brasserie will have access to the ensuing New Year’s Eve Party, which will last until the early hours of the morning in one of the majestic banqueting halls of Four Seasons Hotel Madrid. Madrid’s most sophisticated celebration will feature DJs and live entertainment from various vocalists and violinists.
