Salmonella Testing Provides Solutions to Recent HVP Scare

HVP, or hydrolyzed vegetable protein, has made the front page of news outlets across the country over the last few days. A Nevada food manufacturer that supplies HVP as a basic ingredient for other processed food manufacturers has come under the U.S. Food and Drug Administration’s (FDA) scrutiny after a shipment tested positive for Salmonella.

HVP is a common flavor enhancer that is used in numerous processed foods. According to a FDA release, “The company is recalling all hydrolyzed vegetable protein in powder and paste form that it has produced since Sept. 17, 2009.” It continues, “This situation clearly underscores the need for new food safety legislation to equip FDA with the tools we need to prevent contamination" said Dr. Jeff Farrar, associate commissioner for food protection, FDA’s Office of Foods.

Salmonella is a Gram-negative bacterium that is found worldwide in warm and cold-blooded animals, including humans. Infections from the bacteria can be caused by eating contaminated foods and by transmission from animals to humans. According to some reports, the Salmonella from the HVP in question could affect thousands of food products.

Exposure to Salmonella can cause diarrhea, fever and stomach cramps within 12 to 72 hours of exposure. The infection, known as Salmonellosis, typically lasts from 4 to 7 days. Some infected people require hospitalization and there is the possibility that the infection can spread from the intestines into the blood stream and beyond.
