Valka makes cutting-edge advancements in portioning salmon fillets

Valka takes the lead in automated salmon portioning and pin bone removal with the Valka Cutter.

By combining the advanced image processing systems of both 3D imaging and X-Rays with water jets controlled by robots the Valka Cutter portions and removes pin bones with precision.

Using advanced imaging technology allows every single fillet to be accurately analyzed by the system. This ensures uniform and efficient portioning in relation to the size and thickness of the fillet and in accordance with user specifications. It also creates many options in cutting patterns and programs, allowing the patterns to be cut depending on the size of the fillet.

In an effort to create the most versatile cutter possible, Valka has worked with the salmon industry to develop a cutter designed to handle salmon fillets whether they be pre-rigor or post rigor. Complex optimization tasks are performed using tilted 2D and dynamic 3D water jet robots. Using these special cutting techniques, the Valka cutter gets the most out of every fillet. The versatility in cutting also includes portioning of both skin on and skinless fillets. Through the use of a special serrated steel belt, the product is held firmly during portioning regardless of whether the skin is on or off.

Expanding on previous cutting methods to go beyond cutting along parallel lines, the Valka Cutter offers multiple cutting options. In addition to cutting parallel lines, it can also cut curved and angled patterns to maximize use of the fillet  and minimize waste. Every one of these features are included within one machine greatly improving product handling and reducing the amount of labor needed for trimming.

A number of robot types are available for the Valka Cutter so that it may be customized to suit a variety of portion types. With a belt speed of up to 480 mm/sec the Valka Cutter is also the most efficient portioning machine on the market.

Since debuting its water-jet cutting machine at Seafood Expo Global 2014 in Brussels, Belgium, Valka has been focused on increasing its processing presence worldwide. The company contracted with Båtsfjordbruket in September 2019 to provide two complete automated fillet processing lines for whitefish and salmon. It also contracted with Norway’s SalMar in March 2020 to give the seafood supplier with a state-of-the-art salmon grading and packing system.
