EMSL Analytical Prepares for Annual Summer Slaughter Plant Compliance Testing
Meat Sponge Sample Kits Offer Convenience, Peace of Mind.
With the summer season approaching EMSL Analytical is once again gearing up for an influx of samples from meat processing clients. Since 1997, the Food Safety and Inspection Service (FSIS), in conjunction with the USDA have required large federally inspected slaughter plants to conduct microbial testing for generic E. coli.
Beginning June 1st of each year, regulated establishments are required to test at least one carcass sponge sample per week for 13 consecutive weeks. To stay compliant with the Code of Federal Regulations (9 CFR 310.25) establishments must meet a pre-determined standard.
“This is always a busy time of year for us,” says Joy Dell’Aringa, the National Food Microbiology Supervisor for EMSL, “we offer everything our clients they need for compliance: supplies, coolers, compiled reports. EMSL ships clients the 13 carcass sponge kits at the beginning of the sampling season. Standard analysis is a 48 hour test for the enumeration of both Coliforms and generic E. coli. Additional analysis such as Aerobic Plate Count, Listeria, Salmonella, and E. coli O157:H7 can be requested as well.
“This helps the plants to gather ancillary information about ongoing sanitation controls. While it is not yet required, our pro-active clients gain an extra level of comfort as to the safety of their product with the additional testing parameters. It paints a bigger picture of the effectiveness of their HACCP plan” says Dell’Aringa.
