A Solution To The ‘Gluten-Free’ Dilemma?

A Wall Street Journal article earlier this week highlighted the serious challenges that surround the increasing public demand for food that is truly ‘Gluten-Free’. The demand for gluten free foods has been steadily rising.  Roughly 1% of the American population has celiac disease, which is an autoimmune disorder affecting the digestion of the gluten.  However, another 6-10% of American adults have varying levels of gluten sensitivity.  These individuals suffer various digestive symptoms if gluten is mistakenly eaten.
