Houston Bistro des Amis Autumn French Wine Dinner

Houston Bistro des Amis, a French restaurant and catering service, is having its annual autumn wine dinner. This time there will be four courses with an appropriate wine pairing or champagne for each one.

“Autumn excites me” says Bernard, one of the Managing Partners and World Master Chef of this Houston bistro. “With this change in season, new foods and tastes arrive from Texas ranches, nearby gardens, and the Gulf. I’ve changed the menu appropriately and am introducing some of my newest creations through this wine dinner.”

Starting with seasonal pears and then complimented by blue cheese and other refreshing flavors and textures, the first course is paired with the first-class wine: Blanc de Blanc Domaines d’Oc.

Next up, the Foie Gras is latest creation to bring one of a kind dishes to Bernard’s Houston Bistro. Sip the accompanying wine, Pinot Gris Grand Cru Kessler, and layers of flavors should evolve making this dish the special one for the evening.

The main courses offer surf or turf. The first, a Sole fish with melted soft Brie cheese and a light sauce, with a medley of vegetables. This chicken of the sea is being complimented by La Doucette Pouilly Fume, a 100% Sauvignon Blanc.

Usually the other main entree choice would be introduced first, but it’s the wine that needs the introduction: ChateauNeuf du Pape Haute Pierre. This full-bodied wine will be offered with a rack of lamb that has a light Dijon crust, and served with gratin Dauphinois potatoes.

Finally, for dessert, Lois Roeder Brut Champagne and a Chocolate Halzenut Craquant will end the dinner. Those not familiar with this dessert, it has a rich front-end taste with a soft-nutty ending. The champagne should create distinct layers of flavors.
