Shangri-La Hotel, Surabaya Appoints Naotaka Tokuhisa as Nishimura’s Japanese Chef

Shangri-La Hotel, Surabaya has appointed Naotaka Tokuhisa as its new Japanese Chef to lead the culinary team at Nishimura restaurant.

A Japanese national who was born and trained in Tokyo, Japan, Chef Naotaka is delighted to join the Shangri-La Hotel, Surabaya family.

He has over 20 years of experience and has worked at five-star Japanese restaurants in Bahrain, Thailand, Japan and the Persian Gulf. He specialises in sushi and kaiseki, a traditional Japanese course-by-course set menu. “Techniques, quality and timing are my main styles for implementing quality food service,” said Chef Naotaka.

Chef Naotaka is exploring the local produced and ingredients and is excited to begin work with the team to ensure that Nishimura delivers authentic Japanese cuisine with a touch of modern flair to the dining scene in Surabaya.
